Try this vegan savory Olive Oil Crust which takes only minutes to prepare:
Ingredients:
250 grams of white or whole wheat flour (French T80)
1 teaspoon fine seasalt
1 teaspoon dried herbs (rosemary or thyme)
60 ml of Castaway Extra Virgin Olive Oil
120 ml cold water
Combine the dry ingredients in a medium bowl, add the oil and water
Mix with a fork until just combined
Transfer to a work surface and knead until ti comes together in a ball
Wrap in clingfilm and place in the fridge for 30 minute
In the meantime prepare your favorite vegetable filling while heating the oven
to 170 deg C.
Sprinkle a little flour on your dough, work surface and rolling pin and roll out the dough
in a circle large enough to fill your tart pan. Do this quickly using 45 degrees turns.
Place the dough carefully in your tin, trim the edges and then prick with a fork all aver.
Then bake in the oven for 15 minutes.
Fill with four favorite vegetable filling and bake for a further 20 – 25 minutes.
