How it’s made…
Producing extra virgin olive oil is more of a difficult process than most people realize.To begin with, from caring for the trees and carefully harvesting and hand-picking the fresh olives, down to thoroughly monitoring every single step of the entire production process.
To maintain the temperature is another important factor; during the mechanical extraction process, the temperature must be kept below 75 degrees Fahrenheit or 24 degrees Celsius at all times. But even after the oil has been bottled, it is important that it is kept away from heat and light.
The acidity levels in extra virgin oil cannot be over 0.8%, the lower the acidity the higher the quality. The acidity level in our oil, Castaway Extra Virgin Greek Olive Oil is 0.482%!
